- 2 cups cooked rice (white or brown)
- 2 tbsp butter
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 1 can (10.5 oz) condensed cream of chicken soup
- ⅓ cup chicken stock
- ½ cup sour cream
- 2 cups shredded sharp cheddar cheese
- 2 cups cooked chicken, shredded or chopped
- ⅓ cup grated parmesan cheese, for topping
Preheat oven to 350°F (175°C)
In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and minced garlic. Sauté for 4–5 minutes, until the vegetables are soft and fragrant.
Reduce the heat slightly and stir in the cooked chicken, cooked rice, condensed chicken soup, chicken stock, sour cream, and shredded cheddar cheese. Mix until all ingredients are evenly combined. Season with salt and pepper to taste.
Transfer the mixture to a baking dish, spreading it evenly. Sprinkle the grated Parmesan cheese over the top.
Place the casserole in the oven and bake for 35 minutes, until it’s bubbly and heated through.
For a golden-brown top, switch your oven to broil for 1–2 minutes. Keep a close eye to prevent burning.
Allow the casserole to rest for 5–10 minutes before serving. This helps it set slightly and makes it easier to scoop onto plates.
